Cuban Pork Roast
(Serves 8-10)
15-20 minutes prep time, 3-4 hours cooking time.

8lbs, bone in fresh pork picnic shoulder. Other meats can be used, but pork is standard.
6 Limes or 1 cup of lime juice
8 cloves of garlic
2 tablespoons of salt
1 tablespoon dried oregano
1 tablespoon cumin
2 cups water
3 tablespoons of white vinegar

Preheat oven to 325°F. Squeeze the limes to produce the necessary cup of lime juice. Mince the garlic. In a bowl, stir everything together, with the exception being the pork. Poke holes in the meat so that the sauce can be absorbed more easily. Then put the pork in a dish which is then covered with the sauce. Bake it, cover it with tinfoil, slowly at 325°F for 90-120 minutes. Then uncover and bake for another 90-120 minutes.
